Ayala’s Brut Nature is a blend of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier, and spends nearly 4 years in the cellar ageing so that the acidity is integrated. 

Food Pairing: Best matched with smoked Salmon. A lovely creamy yeasty fizz cuts through the richness of the wine; the flavours softening the smoke and melting the salmon, the oiliness rounding out the edges of the wine. A superlative match.
