This is all around fave Sauv. Blanc. Produced by William Fèvre Saint-Bris is a Sauvignon Blanc Beauty amongst the Chardonnay vines in this tiny and only Burgundy appellation allowed to make Sauvignon Blanc. Doesn't get any cleaner, leaner and vibrant than this. Fragrant with light green herbs, fresh hay, gooseberry and lemon juice aromas on the nose. Brilliantly balanced with great acidity for food. Finishes long with lemon zest and briny mineral flavours on the palate. Made for raw oysters on the half-shell with a raspberry mignonette.
